Encore @ Fort Canning Green (28th – 30th March 2014)

“Encore is a 3 night musical showcase featuring the musical movies “Mamma Mia!”, A hard days night’ from the Beatles & always popular “Grease”. “

Some snippets of the 3-day event 🙂

Day 1: “Mamma Mia!”

A mini rant!! We didn’t know that we can’t bring outside food to the venue 😦 so we packed picnic food on the first day. Was quite pissed off by the rather ridiculous rule as we actually paid about $20 per ticket for an open air screening of movie. And then forcing us to purchase $3 mineral water (yes you have to empty your bottles at the entrance), and another $10 – 15 buying food, same food everyday. I saw someone abandon their watermelon, it was quite funny. We think this is the most upsetting part of the screening and will deter us from joining next year.

Anyways, luckily we arrived slightly early on a Friday evening so we found a spot outside the venue, just next to the park to picnic first. Free live band from 5 pm to 7 pm before the movie screening. Singer (Syltra Lee), her voice super power!

No mood to cam-whore!! cuz we need to rush through our picnic!! boo

Kronenbourg 1664 The Blanc tasted very smooth and fruity (passionfruit / mango?) Love it!

But not the very high quality type la…. hahs. And the humid weather made the popcorn turned soggy very fast.

Arrived early so we went to take some photos at the photo booth! The props were rather interesting and apt.

We shared a roast chicken breast salad which were not bad, meat wasn’t too dry and salad dressing was tangy and appetizing. Salad $10 + Fries $5 + Water $3

This movie was my least favourite, maybe because I am not so much of a Beatles fan. *shrugs

Day 3: “Grease!!!”

Encore @ Fort Canning Green

My favourite movie of the event! Grease reminded me of the 70s High School Musical. The leading actress (Olivia Newton-John) was so pretty and graceful in the movie. The million dollar question: why is the movie called Grease?

Overall I enjoyed myself over these 3 days 🙂

Home Made Shepherd’s Pie!

Sometime in mid October I had a mini picnic with my Uni friends to celebrate October babies (three in the clique!). Made this Shepherd’s pie from scratch early on Sunday morning 🙂

Below are the step-by-step demo, thought you might be interested 😀

The raw ingredients

Basically I just put in whatever I like, LOVE mushrooms (wanted to put in Shitake mushrooms but no stocks). Since it was October, the pumpkin month, I thought of mixing pumpkin into the potato to make it more festive looking. (BTW I hate pumpkins, and sometimes I enjoy doing things I hate, weird right)

Naked raw ingredients

Cutting the potatoes up before boiling

Smaller pieces easily to soften

Boil the potatoes in salt water

While waiting for the potatoes to boil, steam the pumpkins till soft enough to mash.

I am not very sure how to deal with pumpkins (I don’t eat them remember?) But I observed that they will melt / disappear into the soup base in steamboats. So I thought these might disintegrate if I boil them. So I steam them instead. Steam until a fork can poke through will little resistance.

Onions -sobs

The fillings for the pie. Marinated minced beef, mushrooms, baby corns, carrots and onions.

Fry the onions with butter

I use SCS butter which is one of the most fragrant massly available butter in Singapore. Surprising this frying step took 3 X longer than I expected as the ingredients are unable to soften.

After frying the ingredients for 30 minutes or so.

Scoop evenly out onto cute aluminium cups. My ratio is about 3/5 fillings to 2/5 mash potato.

Mash the potatoes with pumpkins and sour cream and salt and butter.

Add some chicken / beef stock into the mashed potato for a flavourful taste.

Scoop the mash potatoes onto the cups with an artistic hand.

Sprinkle some Cheese and herbs

Put them in the oven and bake for whatever temperature you like and whatever minutes you want (ok until the chesse turns a bit brown)

And you are done!
